Jeff's Recipes For Great American Eats!

It's a crying shame that American cuisine has come to be mostly defined for so many people around the world - including people in the United States - by the horrific fast-food industry that this country spawned back in the 1950s and 60s. The garbage sold all over the planet these days by big, American fast-food corporations is certainly not the touch-stone of Yankee-Doodle culinary accomplishment (believe me)!

Here are some recipes for a few dishes that have been meal-time and snack staples in American homes since way before the American fast-food industry started clogging arteries with trans-fats around the globe. These classic favorites are all American originals and, in presenting them, I have tried to separate them as best I can by the region of the U. S. in which they were first developed or in which they are most commonly found (the Northwest is not represented per se - the food enjoyed there is pretty much adapted from the Midwest tradition, but with lots more fresh seafood). I have also tried to make the recipes as healthful as possible, and I include Metric measurements for my international visitors.

I grew up with most of the food that follows, so I hope that some of you out there may enjoy these recipes as much as I have over the years and find out that American cuisine is much, much more than what the unhealthy U. S. food industry makes it out to be!
