Jeff's
Great American Eats!

Welcome to my effort to help share a few classic, American "home-cooking" recipes from all over our country with our friends and neighbors overseas! With the exceptions of Alaska and Hawa'ii, I have either lived/worked or traveled extensively in nearly every region of the United States of America and I am well versed in the various, major cooking traditions found in the different areas of my homeland. So I thought that I might, through this web site, be able to help share my first-hand, American-culinary experiences with those living elsewhere, especially those living in English-speaking countries who have never been to the U.S., and to clarify as best as I can for them the type of common foods that we Americans have typically eaten in the past at home or during informal occasions long before the advent of fast food, and certainly ages before things like "30-minute meal" shows became popular on cable-TV cooking channels in this country.

Contrary to wide-spread misconceptions both here and abroad that we are just all about burgers, fries and fast food, the people of this great nation have developed our own regional cuisines with uniquely American dishes in the different parts of the U.S., some of which have garnered considerable international praise and recognition (Cajun/Creole and Southwestern specialties are a couple of examples). I have included lots of helpful picture-photos and images of the food to easily guide you along, so click below to enter the site to see the recipes that I have selected for it and, have no fear, you won't be subjected to endless pop-up ads or asked to spend any money to see them because this is another of my ads-free, cost-free web sites. Enjoy, and please be kind enough to sign my guest book with your feedback!

Midi Song:

"America (My Country,'tis of Thee)"

My country,' tis of thee,
sweet land of liberty, of thee I sing;
land where my fathers died,
land of the pilgrims' pride,
from every mountainside let freedom ring!

My native country, thee,
land of the noble free, thy name I love;
I love thy rocks and rills,
thy woods and templed hills;
my heart with rapture thrills, like that above.

Let music swell the breeze,
and ring from all the trees sweet freedom's song;
let mortal tongues awake;
let all that breathe partake;
let rocks their silence break, the sound prolong.

Our fathers' God, to thee,
author of liberty, to thee we sing;
long may our land be bright
with freedom's holy light;
protect us by thy might, great God, our King.

(Yes, it's a take off the U.K. national anthem by Samuel F. Smith (1808-1895)!)
